In all the terms of learning how to make homemade wine, it can be easy to get confused. One of the most important terms (and sometimes confusing) is acidity. Acidity in wine is incredibly important and it doesn’t mean how acid tasting the wine is! Acidity refers to the flavour in the wine which is derived from the processing of the fruits used in the wine base. Acid is also desired in the fermentation of the yeast, though it’s not necessary except in a few types of wine, and acid is used to kill off harmful bacteria that could damage your wine. Testing for acidity is as easy as getting an inexpensive acid testing kit and comparing it against acidity by type of wines chart which can be easily found online. However, acidity is also based on subjective tastes, so it may take some trial and error before you perfect your homemade wine for your own preferences.
